Ingredients

  • 1.5 kilos 3 lbs. onions, finely chopped
  • 1 carrot finely chopped
  • 1 stalk of celery finely chopped
  • 1 kilo 1 lbs beef for stewing, like chuck
  • 100 g 3-1/2 oz salumi (salame, pancetta and/or prosciutto)
  • White wine
  • Salt and pepper
  • Olive oil or lard
