- 1.5 kilos 3 lbs. onions, finely chopped

- 1 stalk of celery finely chopped
- 1 kilo 1 lbs beef for stewing, like chuck
- 100 g 3-1/2 oz salumi (salame, pancetta and/or prosciutto)
- White wine
- Salt and pepper
- Olive oil or lard
